Kimberley Hefner’s Chilled Tomato Salsa W/Ang Recipe
Ingredients:
8 pcs of chopped tomatoes (Roma)
1/2 c of chopped red bell pepper
8 pcs of basil leaves
2 cl of minced garlic
1/2 c of chopped yellow bell pepper
Red peppers (dried); crushed
1/2 c of olive oil (extra virgin)
Salt & pepper
Cheese (Romano); grated
1/2 lb of angel hair
1/2 c of chopped onions (white)
Instructions:
Combine oil, basil, garlic, onion, tomatoes, yellow and red peppers. Adjust seasoning with salt then pepper. In salted boiling water, pasta ’til soft yet firm. Drain pasta well.
Serve with sauce on top. Garnish with cheese and red peppers. Best served as appetizers.
