Kukul Mus Thakkali (Chicken & Tomato Curry) Recipe
Ingredients:
1-1/3 kgs of chicken
50 gms of shallots
3 pcs of tomatoes
1 pc of chili (fresh)
3 cl of garlic; sliced
1 tsp of chili powder
2 tsps of paprika
2 pcs of cloves
3 pcs of cardamoms
1 pc of cinnamon (stick)
1 tsp of salt
1/2 tsp of fenugreek
3 tsps of curry powder
2 tsps of sugar (brown)
75 ml of oil-sprig curry leaves
1/4 tsp of curry powder
1/2 pc of lemon grass stem
300 ml of milk from coconut (thick)
Juice of half a lime
Instructions:
Rinse and cut chicken then transfer to a plate. Cut chili, shallots & tomatoes then grind garlic with ginger. Crush cloves with cardamoms before sprinkling over chicken.
Mix in vinegar, fenugreek, curry, salt, paprika, cinnamon and chili. Let it sit and marinate about 20-25 minutes.
Saute ginger, garlic, chili, shallots, grass and leaves of curry in heated oil ’til shallots are brown in color. Add in tomatoes then toss about 2 minutes.
Mix in chicken then cook for 5-8 minutes more. Pour milk of coconut then let it boil slowly. Lower the heat then simmer ’til chicken becomes tender.
Remove cinnamon then sprinkle curry and juice of lime over chicken before serving.
