La Madeleine’s Tomato Basil Soup

Ingredients:

4 c of tomatoes; peeled, cored & chopped/4 c of whole tomatoes in can; crushed
1/4 pound of butter (unsalted)
12 pcs of basil (fresh); rinsed
Salt (to taste)
1/4 tsp of ground pepper
1 c of heavy cream

Instructions:

Combine the tomatoes and juice in a saucepan. Allow to simmer for half an hour. Puree with fresh basil in batches into a food blender.

Return mixture into saucepan then add in butter and cream as you stir on low-heat. Serve soup with fresh basil and bread of choice.
