La Parilla Tomato Arbol Salsa Recipe
Ingredients:
1/4 c of corn oil
6 cl of garlic (medium)
12 pcs of chiles (arbol); w/ seeds
3/4 c of water
2 pcs of plum Roma tomatoes
1/4 tsp of toasted oregano
1/4 tsp of salt (kosher)
1/4 tsp of cumin; toasted & ground
Instructions:
Roast the tomatoes in pan ’til browned deeply and blistered. Roast the garlic in pan ’til soft and lightly brown before peeling.
Saute chilies in heated oil by batches ’til brown lightly and puffed for 10-15 seconds. Remove oil off the chilies then transfer into blender.
Mix in two tablespoons of oil, water, tomatoes and garlic. Blend mixture ’til smooth. Mix in salt, oregano & cumin then blend mixture again. Store air tight container for three days inside refrigerator.
