Leek & Tomato Soup Recipe
Ingredients:
4 pcs of leeks (medium)
6 pcs of boiled potatoes
3 pcs of tomatoes (medium)
2 pcs of onions (medium)
5 Tbsps of ghee
2 tsps of sugar
4 c of stock
Salt and pepper
Water
Instructions:
Cut leeks lengthwise then rinse using water. Cut leeks to chunks. Chop tomatoes and dice the potatoes. Slice the onions thinly.
Melt three tablespoons of ghee into pot then add in leek and onions. Let it simmer about 5-10 minutes then add in tomatoes and potatoes. Let it simmer slowly for 2-3 minutes.
Pour stock in then boil. Add salt, pepper and sugar. Lower the heat then simmer. Then, cook ’til vegetables turn soft. Set aside to cool. Blend mixture, adding water as needed. Good for 6 persons.
