Lentil~ Garbanzo Bean & Tomato Salad Recipe
Ingredients:
2.5 c of water
4.5 Tbsps of olive oil
1 c of lentils
1 pc of bay leaf
2 pcs of carrots; peel off & diced
15-16 ozs of canned beans (Garbanzo); washed & strained
Half basket of cherry tomatoes; halved
5 pcs of chopped scallions
1 c of parsley (fresh); chopped
2 Tbsps of lemon juices (fresh) and
1 tsp of lemon juices (fresh)
Instructions:
Combine carrot, bay leaf, water and lentils in a saucepan. Let it boil then lower heat. Allow to simmer with cover ’til lentils become tender for 25-30 minutes.
Strain mixture then transfer into a large-sized bowl. Set it aside to cool. Add beans, tomatoes, parsley, scallions, olive oil and lemon juices to the lentils. Adjust seasoning with some pepper and salt.
Good for 4 persons.
