Lentil Loaf With Italian Tomato Sauce Recipe
Ingredients:
1 pc of diced onion
1/2 c of wheat germ
2 Tbsps of oil
2.5 c of cooked lentils
1/2 c of bread crumbs
1/2 c of ground walnuts
1/2 tsp of sage
3/4 c of stock (vegetable)
12 ozs of canned tomato sauce
2 Tbsps of yeast
12 ozs of canned tomatoes (whole); chopped up
1/2 c of chopped mushrooms
1 Tbsp of chopped basil
1 Tbsps of chopped oregano
Instructions:
Preheat the oven 350 degrees F. Grease ring or pan lightly. Set it aside. Cook onions with oil into a large-sized skillet ’til soft.
Add in wheat germ, lentils, crumbs, walnuts, sage, yeast and stock. Transfer into pan then bake ’til brown for 40-45 minutes.
Combine tomato sauce, whole tomatoes, basil, oregano and mushrooms in saucepan then simmer for 15-20 minutes. Transfer lentil loaf on to a serving plate then coat top with sauce. Good for 6 persons.
