Lentil & Tomato Soup Recipe
Ingredients:
3 Tbsps of vegetable oil
1 tsp of rosemary
2 pcs of chopped onions (large)
1 cl of crushed garlic (small)
1-3/4 c of stock
1 tsp of miso
8 ozs of cooked lentils
1 pc of diced carrot (large)
1 pc of chopped celery stick
14 ozs of chopped canned tomatoes
A pinch of seaweed (Arame)
1/2 tsp of cumin
Salt (to taste)
Instructions:
Saute garlic, rosemary and garlic in heated oil about 5-6 minutes. Mix in seaweed, tomatoes, celery, carrot, lentils and stock. Let it boil then lower heat.
Let it simmer with cover about 20-25 minutes. Mix in salt, cumin and miso then blend mixture. Best served hot. Good for 4 persons.
