Light Tomato Soup Recipe
Ingredients:
1 pc of medium-sized English cucumber (seedless); skinned
1 pc of tomato (ripe); skinned
1 Tbsp of onion; chopped
1 cl of chopped garlic (small)
1/4 tsp of curry powder
A pinch of salt
A pinch of pepper
A pinch of nutmeg
1/2 c of water
2 tsps of sugar
1 Tbsp of wine or cider vinegar
2-4 dashes of hot sauce
Instructions:
Chop tomato and cucumber into medium-sized chunks. Combine then blend sugar, hot sauce, vinegar, water, pepper, salt, nutmeg, curry, garlic, onion, tomato and cucumber in a food blender. Puree ’til smooth.
Transfer mixture in a large-sized bowl then chill for an hour. Fill serving bowls then garnish soup with some parsley. Good for 4 persons.
