Mom’s Jersey Fresh Tomato Soup Recipe
Ingredients:
2 pcs of onions (large); chopped finely
1 tsp of sugar
4 strips of bacon; cooked & crumbled
6 pcs of tomatoes (red ripe Jersey); peeled & cored, chopped
1.5 Tbsps of butter
2 Tbsps of paste (tomato)
3 strips of rind (lemon)
4 c of stock (chicken)
1/2 tsp of dried thyme
Pepper & salt for seasoning
1 tsp of dried basil
For the Garnishes:
Croutons & sprigs of basil (fresh)
Instructions:
Melt butter in pan then saute the onions for 5 mins ’til golden and tender. Mix in bacon, herbs, stock, rind, paste and tomatoes.
Let mixture boil then turn down flame, simmer ’til tomatoes become tender (15 mins). Take out rind. Let soup cool, then place in a blender ’til smooth. Strain.
Prior to serving, reheat soup. Top using croutons as well as the sprigs of basil. Serves 6.
