Mother’s Tomato Sauce Recipe
Ingredients:
2 sprigs of parsley (Italian)
1/2 c of oil (olive)
3 lbs of tomatoes (ripe); sliced coarsely or 1 pc carrot (small); peeled and sliced
1 clove of garlic
1/2 pc of onion (medium); sliced
1 tsp of basil (dried) or basil leaves (fresh)
1 stalk of celery (with leaves); chopped coarsely
Instructions:
Put onion & 1/4 c of oil on saucepan then cool ’til onion becomes light brown. Add celery, basil, salt, garlic, parsley, carrot and tomatoes.
Cook on medium flame while covered about 30 minutes ’til vegetables become so soft. Pass mixture through sieve, adjusting salt to taste. Lift off from flame then add what remains of oil. Stir.
