Mum’s Green Tomato Chutney Recipe
Ingredients:
3 lbs of tomatoes (green); washed, trimmed and quartered
1 & 1/4 lbs of apples (red); washed, cored and quartered
3 pcs of pepper (sweet red, medium); seeded and sliced
4 pcs of onions (medium); peeled and quartered
1.5 Tbsps of salt
1.5 tsps of pepper
1.5 tsps of cinnamon (ground)
3/4 tsp of cloves (ground)
2.5 c of sugar
2 c of vinegar (apple cider)
Instructions:
Using food processing machine or grinder, process or grind into chunks (medium) the apples, tomatoes, sweet peppers and onions in batches.
Put processed mixture in huge roasting pan or Dutch oven then add salt, pepper, cinnamon, cloves, sugar and vinegar. Mix thoroughly using spoon made of wood..
Set heat to medium and bring to a boil (slow). Uncover pan and let mixture simmer (30 mins) while stirring constantly, preventing burning.
Take out from fire and put into sterilized jars (6 pints). Fill up to 1/2″ of jar cover then seal. Cool then store.
