Mushroom & Sun-Dried Tomato Pizza Recipe
Ingredients:
1.5 ozs of tomatoes (sun-dried); cut into 1/4″
1 can of tomatoes (diced, 14.5 ozs)
2 c of mushrooms; sliced
2 Tbsps of basil (fresh); chopped/1/2 tsp of dried basil
2 tsps of Tabasco sauce (garlic pepper)
1/4 tsp of salt
1 can of pizza dough (refrigerated, 10 ozs)
1 pc of zucchini (small); sliced thinly
1 c of cheese (mozzarella); shredded
2 Tbsps of cheese (parmesan or Romano); freshly grated
Instructions:
In saucepan, put tomatoes (dried) with water (1/2 c); let stand 15 mins. Put in diced tomatoes then boil. Turn down flame and let tomatoes simmer (15 mins).
Add mushroom, basil, Tabasco sauce and salt to the tomatoes then cook, stirring constantly, ’til mixture thickens.
Flatten dough on an oiled pizza pan (12″).
Evenly distribute tomato mix on dough, then lay out zucchini above. Sprinkle mozzarella and parmesan cheese. Put in the oven (425 degrees F) for 12-15 mins or ’til crust turns gold brown.
