Mushrooms & Dried Tomato Sauce Recipe
Ingredients:
1/2 oz of porcini (dried)
1 c of water (boiling)
3 pcs of tomatoes (sun-dried)
2 tsps of rosemary (fresh)/1/2 tsp (dried)
2 cloves of garlic
1 Tbsp of parsley (chopped)
1 pc of onion (small); diced finely
Wine (white for sauteing onions)
1/2 lb of mushrooms (fresh); chopped coarsely
Salt
Pepper (fresh); ground
Instructions:
Soak tomatoes with porcini into water (boiling) 30 minutes then slice to little pieces. Set aside liquid used for soaking.
Chop together finely garlic, rosemary and 1/2 amounts of parsley. Saute this mixture with onion, tomatoes as well as mushrooms in wine in 1 minute.
Season with salt as well as lots pepper then cook on moderate-high heat 3 to 4 minutes. Gradually put reserved liquid into pan. Boil and lower heat to simmer 15 mins. Season with pepper as well as salt.
