New Potato Salad With Dried Tomatoes Recipe

Ingredients:

3 lbs of potato (small); scrubbed & sliced into quarters
1.5 tsps of salt
1/3 c of water (boiling)
1 oz of tomato; dried & halved
2 Tbsp of oil (olive)
1.5 c of celery; sliced
1/2 c of celery leaves; chopped
4 onions (green), sliced
1/4 c of fresh dill (Fresh); snipped/1 Tbsp of dillweed (dried)
1/3 c of cream (sour, reduced fat)
1/3 c of yogurt (plain, lowfat)
1 Tbsp of horseradish (white)
1/4 tsp of pepper

Instructions:

Submerge potatoes in water, drop 1/2 teaspoon of salt, cover partially then bring into boiling on high flame. Let boil slowly 15 mins ’til potatoes become tender yet firm.

Submerge tomatoes using bowl under water (boiling) then allow to stand ten minutes. Let drain then put into pot. Drizzle oil (olive) as well as 1/2 teaspoon of salt on potato then toss lightly.

Cut tomatoes and drop on potatoes. Add dill, onions, leaves and celery. Transfer to bowl, then cover, put into fridge ’til ready to use.

Combine 1/2 teaspoon of salt, pepper, horseradish, yogurt and cream then put on potato then toss. Cover then put into fridge for one day.
