Okra & Tomatoes Recipe
Ingredients:
2 pounds of fresh okra
4 Tbsps of oil (vegetable)
1 medium onion; minced
2 chilies (green); chopped
4 cloves garlic; chopped
A pinch of salt
1/4 tsp of turmeric
1/2 tsp of cumin seeds
1/4 c fresh leaves of coriander; shopped
16 ounces of tomatoes (stewed)
1/2 c of water
2 Tbsps of vinegar
1 Tbsp of ground pepper (black)
Instructions:
Dry and wipe pieces of okra. Cut every okra into four pieces then set them aside.
You heat oil in skillet. You add garlic, onions, cumin seeds , leaves of coriander and chilies. Saute for 4-5 minutes then add in turmeric, stirring once/twice.
Add vinegar, 1/2 c water and tomatoes then boil. Minimize heat then allow to simmer for 15 minutes. Add in pepper, salt and okra. Continue cooking, covered, for 20 minutes, ’til okra becomes tender.
