Oriental Beef & Tomato Casserole Recipe
Ingredients:
1 lb of beef (tender); sliced thinly
1 c of celery; sliced thin
1 tbsp of cornstarch
1 tbsp of water
2 tbsps of sot sauce1 tbsp of sugar
1 tsp of ginger (powdered ground)
4 pcs of tomatoes (small); peeled & sliced into wedges
1 pc of pepper (green); sliced thin
1 garlic clove; crushed & peeled
Instructions:
Put the beef in 2-quart, non-metal, microwaveable dish and microwave for 5 mins ’til meat changes in color; remove extra liquid.
Put in tomatoes, pepper, onion, celery, powdered ginger, soy sauce, sugar and garlic and cook for another 5 mins ’til tender.
Mix cornstarch with water in cup to create a creamy paste, then pour mixture into the meat and cook for 2 mins. more ’til smooth and thickened. Serves 4.
