Orzo With Sun-Dried Tomatoes Recipe
Ingredients:
1/2 c of tomatoes (sun-dried); cut to small pcs
1 c of water (boiling)
1/2 c & 2 Tbsps of fat-free stock (chicken, canned)
1/2 c of onion; sliced
1/2 c of mushrooms; sliced
1/2 c of orzo (uncooked)
1/2 c of basil (fresh); chopped
Salt (to taste)
Black pepper (freshly ground, to taste)
Instructions:
Boil 8-12 cups of water inside a pot. Place the (sun-dried) tomatoes inside a mixing bowl and pour (boiling) water; let it sit for 5 mins.
Heat (2 tablespoons) stock on a non-stick pan; add onion and mushroom. Saute for a min. Drain tomatoes then add onto the sauteed mixture along with the rest of the stock.
Increase the heat to reduce the liquid into half. Once the pot is boiling, add the orzo then let it boil, at about 10 mins. Drain.
Toss the orzo with the mixture of vegetables inside a (serving) bowl. Sprinkle basil then season with salt & pepper.
