Pasta Alla Checca – Pasta With Steeped Tomato Recipe
Ingredients:
2 c of tomatoes (plum, ripe); seeded and chopped
1/2 c of olives (Kalamata); pitted then halved
1/8 c of capers
20 pcs of basil leaves (fresh); torn
1/4 c of olive oil
Pepper (black, freshly milled)
1 clove of garlic; chopped finely
5 ozs of cooked pasta (shell)
Instructions:
Place your tomatoes in a (ceramic) bowl; add olives, capers, basil (2 tablespoons) oil, garlic, and lots of pepper.
Cover the bowl with a plastic wrapper; place under the hot sun, about 2 to 3 hours (3 to 4 hours at room temperature).
Toss pasta with the rest of the oil then add tomato sauce and mix them well.
