Pasta Primavera With Sun-Dried Tomatoes Recipe
Ingredients:
8 ozs of uncooked pasta (rotini, twists, spirals)
1 Tbsp of oil (olive oil or vegetable oil)
2 cloves of garlic; chopped finely
1/8 tsp of hot pepper flakes (red)
1 c of tender beans (green, fresh); cut to 1-inch
2 pcs of zucchini (small); sliced
1/4 c of parsley (fresh); chopped
1 c of carrot; sliced thinly
2 pcs of squash (yellow, small); sliced
1 pc of onion (red, medium); cut to eighths
1/2 c of tomatoes (sun-dried); chopped
1/4 c of broth (chicken)
1/4 c of basil (fresh); chopped
1/4 c of grated cheese (Parmesan)
Instructions:
Prepare the pasta as stated in the package instructions then drain. Heat the oil on a skillet; saute garlic.
Add red (pepper) flakes, zucchini, onions, squash, and carrots; stir-fry till tender-crisp or for 5 mins. Add the broth then let it simmer for a minute.
Combine cooked pasta, (sun-dried) tomatoes, vegetables, and basil on a (serving) bowl. Garnish grated Parmesan. Serve at once.
