Pasta Salad With Rocket & Tomato Dressing Recipe

Ingredients:

4 pcs of tomatoes (ripe); peeled, deseeded, and minced
2 cloves of garlic; minced
60 g of coarsely chopped rocket leaves
240 g of penne pasta quills
1 Tbsp of olive oil
Salt
Pepper (black, freshly ground)

Instructions:

Combine inside the bowl the rocket leaves, tomatoes, and garlic. Add oil; season salt & pepper and cover. Place inside the refrigerator for two hours.

Cook pasta according to package directions till ‘al dente’. Rinse the pasta with (cold) water then drain them well. Toss pasta with chilled mixture of tomato. Serve at once.
