Pasta Salad W/Sun-Dried Tomatoes Recipe
Ingredients:
1/3 c of tomatoes (oil-packed); drained and chopped
1 Tbsp of oil (from tomatoes)
1/3 c of olive oil
2 pcs of garlic clove; chopped finely
1 Tbsp of juice (lemon)
12 Tbsps of artichoke hearts (marinated, jarred); drained
1/2 c of toasted cashews
2 c of freshly cooked pasta (tortellini)
Salt & Pepper
Instructions:
Combine oil (from tomatoes), oil, garlic, and juice inside a bowl. Add artichoke, cashews, and tomatoes; stir thoroughly. Add the pasta; toss them well.
Season salt & pepper then let it stand for an hour. Cover then place inside the refrigerator. Before you serve it, let it stand at room temp.
