Pasta With Pine Nuts & Sun-Dried Tomatoes Recipe
Ingredients:
12 ozs of fusilli (or any spiral-shaped)
5 Tbsps of olive oil
1/2 c of parsley (fresh); chopped
2/3 c of toasted nuts (pine)
2/3 c of tomatoes (sun-dried, oil-packed); drained & chopped up
1/2 c of cheese (Parmesan); grated
Instructions:
Cook the fusilli according to package directions then drain. Heat (3 tablespoons) oil on a skillet above medium-high heat then add cooked fusilli.
Fry for 10 mins or till the edges starts to become crisped; stir occasionally. Pour onto a mixing bowl then add the rest of the oil onto the skillet (same as we used before).
Add (sun-dried) tomatoes & toasted nuts; stir occasionally till heated thoroughly. Pour onto the fried pasta.
Add grated cheese then the parsley; toss them well. Season salt & pepper.
