Pasta With Shrimp In Tomato Cream Recipe
Ingredients:
2 Tbsps of oil (from dried tomatoes)
1 pc of garlic clove; pressed or minced
1 lb of shrimp (large); peeled and deveined
1 c of broth (chicken)
1/4 c of onion (green); sliced thinly
1-1/2 Tbsps of chopped basil (fresh/1 tsp dried)
1/3 c of tomatoes (sun-dried, oil-packed); drained and slivered
1/4 tsp of ground pepper (white)
1 c of whipping cream
3/4 c of vermouth (dry)
10 ozs of linguini (dry)
Water
Cheese (Parmesan); grated freshly
Instructions:
Heat oil on a skillet above moderately-high heat then add garlic. Once heated, add the shrimp; cook for 6 mins till center is opaque, stirring frequently. Take them out then place on the side.
Using the same skillet, add the onion, tomatoes, basil, broth, pepper, cream, and vermouth then cover. Let it boil above (high) heat till reduced into 1-1/2 cups or for 10 mins. Add the shrimp; stir till hot.
Cook the linguini according to its package instructions till ‘al dente’; drain. Combine sauce with pasta; toss them well. Serve hot with grated cheese on top or served separately.
