Pasta With Spiced Lentils & Tomatoes Recipe
Ingredients:
1 Tbsp of corn oil (or peanut oil)
3 cloves of garlic (medium); chopped finely
1 pc of onion (small); chopped finely
1 tsp of cumin (ground)
1 tsp of coriander (ground)
1 tsp of ginger powder
1/2 tsp of pepper flakes (red); crushed
16 oz of tomatoes (whole, salt-free, canned)
1 c of reduced broth (chicken)
1/2 c of lentils (brown)
1 Tbsp of sugar (refined)
1/2 c of yogurt (plain)
2 Tbsps of basil leaves; shredded finely
Cooked pasta
Instructions:
Heat oil on a saucepan above medium heat; add onion and garlic. Once sizzling, add cumin, pepper flakes, coriander, and ginger; saute them for a min.
Squeeze tomatoes and add on the saucepan then add lentils, sugar, and broth; simmer for half an hour till lentils have softened and sauce has thickened.
Add yogurt then the shredded basil; stir them well. Spoon onto the cooked pasta. Serve at once.
