Pasta With Tomato-Chard & Sunflower Seeds Recipe
Ingredients:
1/2 c of seeds (sunflower); toasted
1 tsp of canola oil
2 pcs of garlic cloves; chopped finely
8 ozs of chopped onion
2 lbs of tomatoes (fresh); peeled & seeded
6 oz of tomato paste (canned)
1 tsp of oregano (fresh); minced
1 Tbsp of basil (fresh); minced
1 tsp of salt (to taste)
Black pepper (freshly ground)
8 oz of chard (fresh); rinsed, ribs removed, sliced crosswise to 1-inch
1 lb of pasta (linguine)
Instructions:
Grind inside the processor half the toasted seeds till fine. Save the other half to be used for the garnish. Place the oil on a saucepan above moderate heat. Add the onion; cook till softened, stirring occasionally.
Add the garlic; cook for a while and add paste, tomato, ground seeds, salt, pepper, and herbs. Let it simmer for 15 mins till thickened. Then, steam the chard for 5 mins till tender.
Cook the pasta according to package directions; drain. Place on a platter then spoon over the sauce. Garnish toasted seeds.
