Pasta With Tomatoes White Beans & Pepperoni Recipe
Ingredients:
1 clove of garlic; sliced thinly
1 Tbsp of olive oil
1/3 c of pepperoni; chopped coarsely
1/4 c of chopped onion
2 c of tomatoes (plum, with juice); chopped
1/2 tsp of crumbled basil
1/4 tsp of crumbled oregano
1/4 tsp of hot pepper flakes (red)
2/3 c of white beans (canned); drained
1/4 lb of tubular pasta
Grated cheese (Parmesan)
1 Tbsp of minced parsley (fresh)
Instructions:
Cook garlic on a skillet above medium heat with heated oil. Once golden, take it out then discard the cooked garlic. Add pepperoni then onion; cook above medium-low heat for three mins, stirring frequently.
Add tomatoes with its juices, oregano, basil, salt, pepper, and red pepper flakes; let it simmer for five mins, stirring frequently.
Add parsley then the white beans; simmer for about 5 to 7 mins, partially covered, till slightly thick. Cook pasta according to its package directions; drain. Place it on a serving bowl.
Pour over the tomato sauce; toss them well. Garnish with grated Parmesan and sprigs of parsley.
