Peas Braised In Tomato (Piselli Alla Napoleta) Recipe
Ingredients:
1-1/2 tsps of tomato paste
2-1/2 Tbsps of olive oil
1/3 c of water
1/4 c of onion; chopped coarsely
2-1/2 c of peas (green, frozen)
1/4 tsp of salt
Instructions:
Combine water and paste inside a bowl; stir thoroughly till dissolved.
Heat oil on a saucepan above medium heat. Once heated, add onion; cook till limped, about two mins. Add salt, peas and dissolved paste then cover; cook for 15 mins or till peas become tender.
Remove the cover then increase heat; let it boil till liquid evaporates, 3-5 mins. Serve immediately.
