Penne In Spicy Tomato Sauce Recipe
Ingredients:
1 lb or pasta (penne or mostaccioli)
1 Tbs of olive oil
1/4 tsp of pepper flakes (red)
3 cloves of garlic; chopped finely
28 oz of tomatoes (plum, canned); drained
1/4 c of parsley (fresh, Italian flat-leaf); chopped finely
1/2 c of cheese (Pecorino Romano); grated freshly
Salt & Pepper (to taste)
Instructions:
Cook the pasta according to its package instructions; drain.
While waiting for the pasta, heat the oil on a non-sick skillet above gentle heat then add pepper flakes and garlic. Cook for 1 min till garlic turns golden.
Add the tomatoes and crush them inside; let it simmer above gentle heat till liquid has reduced a little bit, about five mins.
Place cooked pasta on a pot and add sauce. Cook above medium-high heat; continue stirring till it sizzles. Take out from the heat. Then, add parsley and cheese; toss them well.
Adjust the seasonings and serve at once.
