Penne Pasta W/Tomatoes & Chile Recipe
Ingredients:
4 Tbsps of chile (red); crushed
1/2 c of tomatoes (sun-dried, oil-packed); slivered
1 c of olives (black, cured in oil); pitted then halved
1 Tbsp of lemon zest; grated
1/2 c of chopped basil (fresh)
1/2 c of chopped parsley (fresh, Italian)
3 pcs of garlic cloves; chopped finely
1/2 c of olive oil
1 lb of pasta (penne)
2 Tbsps of oil (from the tomatoes)
2 taps of pepper (black, freshly ground)
3/4 lb of grated cheese (Parmesan)
Instructions:
Combine chile, tomatoes, olives, basil, parsley, zest, garlic, olive oil, oil from tomatoes, & black pepper inside a mixing bowl; mix thoroughly then let it stand for 2 hours, letting all flavors blend.
Cook pasta according to its package directions then drain. Place the cooked pasta on the serving platter, add the tomato sauce then toss. Sprinkle cheese on top. Serve immediately.
