Penne Salad With Tomatoes Goat Cheese & Basil Recipe
Ingredients:
12 ozs of uncooked pasta (penne)
3 c of tomatoes; chopped
2 tsps of garlic; crushed
2 Tbsps of olive oil
3/4 c of basil (fresh); chopped
2 Tbsps of vinegar (balsamic)
3 ozs of goat’s cheese (crumbled)
1/3 c of olives (black); sliced
Instructions:
Cook the pasta as stated in the package directions; rinse then drain. Place them on a serving platter.
Add the tomatoes, oil, garlic, vinegar, basil, cheese, pepper, and olives; Toss till cheese starts melting. Serve immediately.
