Tomato Stew Recipe
Ingredients:
3/4 c of diced bacon (smoked)
1 pc of chopped red onion
4 c of chopped tomatoes (vine ripened)/4 c of tomatoes (stewed)
Salt & pepper
1 tsp of sugar
1/2 tsp of hot sauce (Tabasco)
5 pcs of biscuits; crumbled to pieces OR
4 pcs of sliced bread; crumbled to pieces
Instructions:
Saute onion and diced bacon in heated oil on medium to low-heat ’til bacons browns lightly and onions turn translucent. Add in Tabasco, pepper, salt and tomatoes.
Let it cook for 10-12 minutes; frequently stirring. Add in biscuits then cook for 2-3 more minutes. Adjust seasonings. Best served hot. Good for 4 persons.
