Turkey-Tomato Soup Recipe
Ingredients:
1 minced onion (medium)
Bay leaf
1 qt of chicken stock
Pepper
1/2 tsp of thyme; minced
Salt
2 Tbsps of butter
2 pounds of peeled tomatoes w/ juice; seeded and chopped finely
2 c of shredded turkey (cooked)
Instructions:
Saute the onions in heated butter ’til softened. Gradually add bayleaf, stock, thyme, tomatoes, pepper & salt.
Let it simmer for 20 mins. Add in turkey & continue simmering for 5-10 mins. Have bayleaf removed then serve.
